Preparation of Belgian Blue Steak on the BBQ
We use the Barbecook Karl to prepare our Belgian Blue Steak. This stylish table grill has it all: power, comfort and design. This Barbecook charcoal barbecue has a built-in ventilator and is also fully dishwasher-proof. Of course, you can also use another charcoal barbecue or gas barbecue, such as the Stella.
It's important to take the Belgian Blue Steak out of the fridge in time. If you put a Belgian Blue Steak immediately on the barbecue when you take it out of the fridge, it will be 'shocked', which causes the fibres to contract and the steak to become tough.
Fill the inner bowl of the Karl with charcoal and a few lighter cubes. Light the lighter cubes and wait until a grey layer appears on the coals. Then add extra charcoal and wait again. The built-in ventilator gives you full control over the whole process. Brush the entrecote with olive oil and season with salt and pepper. Sear the Belgian Blue Steak briefly on both sides. If desired, you can use the core thermometer to check the temperature of the meat. A sirloin steak is medium rare at 54 degrees. Take the meat from the grill and cut into thin slices. Season with some extra pepper and coarse sea salt.
Extra flavour
In general, a Belgian Blue Steak doesn't need much more than pepper and some coarse sea salt. Still, many people like to experiment with spices in order to make tasty marinades. Of course, we can only support this!
